Preheat the oven to 425 degF. Cover a sheet pan with foil or parchment paper for easier cleanup.
On a baking sheet, toss chicken, peppers, and onions in oil & sprinkle with seasoning. Spread everything into an even layer and mix well.
Bake in preheated oven for 25-30 minutes stirring halfway through.
Remove from oven, toss ingredients well and give your sheet pan a good squeeze of lime juice all over!
Garnish with cilantro leaves and lime slices. Serve with rice/cauliflower rice, gluten free wraps, or lettuce wraps.
