1/2capple cider
2tbspwhole-grain mustard
3/4tspkosher salt

2bay leaves
2tbspfresh parsleychopped (optional)
Instructions
In a 4-to-6 quart slow cooker, combine the potatoes, sausage, apples, and onion. In a medium bowl, stir together the stock, cider, mustard, salt, and pepper; pour over potato mixture. Tuck the bay leaves down into the liquid.
Cover and cook over low heat until the potatoes are tender, 6 to 7 hours. Garnish with parsley, if desired.
Serving size: 1 1/3 cups
