Instructions
Combine potatoes, 1 teaspoon oil, scallion whites, garlic, salt, and pepper in slow cooker. Cover and cook until potatoes are tender, 5 to 6 hours on low or 3 to 4 hours on high.
Stir in parsley, lemon zest and juice, scallion greens, and remaining 1 tablespoon oil, season with salt and pepper to taste. Serve. (Potatoes can be held on warm or low setting for up to 2 hours.)
