Herbed Fingerling Potatoes with Lemon

Ingredients

  • 2 lbs fingerling potatoes
  • 4 tsp extra virgin olive oil
  • 2 scallions white parts minced, green parts sliced thin, divided
  • 3 cloves garlic minced
  • 1 tsp table salt
  • 1/4 tsp fresh ground pepper
  • 1 tbsp fresh parsley chopped
  • 1 tsp lemon zest plus 1 tbsp juice

Instructions

  • Combine potatoes, 1 teaspoon oil, scallion whites, garlic, salt, and pepper in slow cooker. Cover and cook until potatoes are tender, 5 to 6 hours on low or 3 to 4 hours on high.
  • Stir in parsley, lemon zest and juice, scallion greens, and remaining 1 tablespoon oil, season with salt and pepper to taste. Serve. (Potatoes can be held on warm or low setting for up to 2 hours.)
