Green Chili Lemonade

Ingredients

  • 1 tbsp canned green chilis 1-2 tbsp; adjust to taste
  • 2 lemons juiced
  • 2 cups cold water
  • 3 tbsp sugar or honey/agave
  • 1 pinch kosher salt

Instructions

Blend the base

  • Combine lemon juice, canned green chilis, sugar, salt, and water in a blender. Blend until smooth.

Strain (optional)

  • If you prefer a smoother drink, strain the mixture to remove chili bits.

Serve chilled

  • Pour over ice and garnish with mint or lemon slices. For a fizzy twist, use soda water instead of plain water.

Notes

This recipe was inspired by Kathleen's Green Chili Lemonade at Burrito Banquet (https://www.yelp.com/biz/burrito-banquet-cimarron-3) in Cimarron, NM.  We tried her Green Chili Lemonade before taking off on the trail for our 2025 trip to Philmont Scout Ranch.  Everyone who tried her lemonade, raved about it the entire time we were on trail!  Sadly, when we returned afterwards, Kathleen had already closed for the season.
Adjust the amount of green chilis (1-2 tablespoons) based upon your preference.
Optional upgrades include:
  • Add ginger for extra zing.
  • Mix in cranberry syrup for a bitter-sweet depth.
