Trader Joe’s Chili Lime Fajitas

Although we haven’t tried, this recipe could easily be adapted as a “Camping” or “Dutch Oven” recipe. We might have to give this a test drive!

Trader Joe’s Chili Lime Fajitas

Ingredients

  • 2 boneless, skinless chicken breasts cut into thin strips
  • 2 green bell peppers thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 medium onion sliced in half moons
  • 1/2 cup canola oil
  • 2 tbsp Trader Joe’s Chili Lime Seasoning
  • salt and pepper to taste
  • limes and cilantro to garnish

Instructions

  • Preheat the oven to 425 degF. Cover a sheet pan with foil or parchment paper for easier cleanup.
  • On a baking sheet, toss chicken, peppers, and onions in oil & sprinkle with seasoning. Spread everything into an even layer and mix well.
  • Bake in preheated oven for 25-30 minutes stirring halfway through.
  • Remove from oven, toss ingredients well and give your sheet pan a good squeeze of lime juice all over!
  • Garnish with cilantro leaves and lime slices. Serve with rice/cauliflower rice, gluten free wraps, or lettuce wraps.
