Slow Cooker Sausage with Potatoes and Apples

Ingredients
- 1 1/2 lbs. baby red potatoes uncooked, halved
- 12 oz chicken apple sausage sliced
- 2 granny smith apples peeled and cut into 1-inch pieces
- 1 yellow onion vertically sliced
- 1/2 c chicken stock unsalted
- 1/2 c apple cider
- 2 tbsp whole-grain mustard
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 2 bay leaves
- 2 tbsp fresh parsley chopped (optional)
Instructions
- In a 4-to-6 quart slow cooker, combine the potatoes, sausage, apples, and onion. In a medium bowl, stir together the stock, cider, mustard, salt, and pepper; pour over potato mixture. Tuck the bay leaves down into the liquid.
- Cover and cook over low heat until the potatoes are tender, 6 to 7 hours. Garnish with parsley, if desired.
- Serving size: 1 1/3 cups
