Slow Cooker Chicken Tikka Masala

Ingredients
- 28 oz canned crushed tomatoes
- 1 small onion minced
- 1 tbsp garlic minced
- 1 tbsp ginger root fresh, minced
- 2 tbsp garam masala
- 1 tbsp dark brown sugar
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 2 lbs boneless, skinless chicken thighs
- 1 tbsp kosher salt
Instructions
- Combine all ingredients in a 4-to-6 quart slow cooker. Cook on high for 3 to 4 hours, or low for 6 to 8 hours. Yields about 1 cup chicken with sauce per serving.

Boneless, skinless chicken breasts (cubed) can be used as an alternative to the chicken thighs.
This recipe can be adapted to cook in a dutch oven, and either baked or cooked over a campfire/coals. Simply assemble the ingredients in a dutch oven and then bake/cook at 400° for 3o-minutes, or until the chicken is cooked through.
