California Roll Sushi Bowl

Ingredients
- 2 tbsp light mayonnaise
- 1 tsp Sriracha hot sauce
- 1 1/3 cups long grain brown rice cooked
- 2 tsp low sodium soy sauce
- 1 cup cucumber(s) sliced into half moons
- 2/3 cup shredded carrot(s)
- 1 avocado pitted and sliced
- 6 oz canned crab meat lump variety, drained
- 1/2 sheet(s) nori seaweed crumbled or chopped
Instructions
- In a small bowl, stir together the mayonnaise, sriracha, and 1 tsp water; set aside.
- Warm the rice and divide it evenly between 2 shallow bowls and drizzle evenly with the soy sauce. Divide the cucumber, carrots, avocado and crab between the bowls. Drizzle the sauce evenly over the bowls; top with the seaweed.
