Ingredients

  • 14 oz canned black beans
  • 1/2 tsp garlic powder
  • 2 red peppers diced
  • 1 tbsp olive oil
  • 1 cup frozen corn
  • 2 cups long grain brown rice cooked
  • salt
  • 1 avocado pitted and sliced
  • Trader Joe's Green Goddess Dressing

Seasoning

  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 pinch red pepper flakes
  • 1/4 tsp black pepper fresh ground

Instructions

  • Simmer black beans on low in a small sauce pan for 4-5 minutes with 1/4 teaspoon off salt – stir often.
  • In a pan, heat oil on low to medium heat – add diced peppers with 1/4 teaspoon salt – saute for 5 minutes until soft. Add frozen corn, stir and cook for another 2 minutes until corn is cooked. Then add seasonings to peppers and corn.
  • Serve black beans, corn, and peppers over cooked rice with avocado, and Green Goddess Dressing
