Ingredients

  • 1 cup old-fashioned oats
  • 3/4 cup milk
  • 1/2 cup pure pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla bean paste or use vanilla extract
  • 1/2 tbsp honey
  • graham crackers crushed, for topping

Instructions

  • In a medium bowl, mix together oats, milk, pumpkin, pumpkin pie spice, cinnamon, vanilla, and honey. Pour into two mason jars or an airtight container with lid.
  • Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid.
  • Remove from refrigerator, stir, and top with crushed graham crackers, if desired.
