Mexican Pinto Beans

Ingredients
- 2 tbsp olive oil
- 1 yellow onion diced
- 2 pinto beans, canned including liquid
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne powder
- kosher salt to taste
Optional Sides
- rice brown rice, Mexican rice
Optional Garnishes
- cilantro
Instructions
- In a large skillet, over medium heat, add oil. Once heated, add onions and sauté until translucent and light golden.
- Add cumin, smoked paprika, garlic powder, onion powder, and cayenne powder. Mix well and sauté for 1 minute.
- Add pinto beans, mix well, and cook, stirring occasionally to prevent sticking. Cook until warmed through.
