Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 2 pinto beans, canned including liquid
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne powder
  • kosher salt to taste

Optional Sides

  • rice brown rice, Mexican rice

Optional Garnishes

  • cilantro

Instructions

  • In a large skillet, over medium heat, add oil. Once heated, add onions and sauté until translucent and light golden.
  • Add cumin, smoked paprika, garlic powder, onion powder, and cayenne powder. Mix well and sauté for 1 minute.
  • Add pinto beans, mix well, and cook, stirring occasionally to prevent sticking. Cook until warmed through.
