“Bomi’s” Champagne Vinaigrette
While technically not Bomi’s recipe, this champagne vinaigrette reminds me of a salad that would always accompany any dinner at Bomi’s house. Christmas, Thanksgiving, a relative in town, or “just because”, there was always a simple salad of mixed red and green lettuce, minced shallot, and vinaigrette served after dinner.

Hawaiian Chicken Foil Packets
While working towards their “Cast Iron Chef” activity pin, Daylen’s Webelos den chose this recipe to cook one evening. The den gathered at our house, and together we assembled the Hawaiian Chicken Foil Packets, cooked a Dutch Oven Peach Cobbler, and baked drop biscuits in “box ovens” which scouts had previously built during den meetings!
Salsa Verde Chicken & Rice Foil Packets
In December 2019, having abnormally warm weather over Christmas break, we decided to go camping for the night at Charlestown State Park. We found this recipe to try and all really enjoyed it! This recipe can also be adapted as a backpacking meal by dehydrating the ingredients and reconstituting with water.
