“Bomi’s” Champagne Vinaigrette

While technically not Bomi’s recipe, this champagne vinaigrette reminds me of a salad that would always accompany any dinner at Bomi’s house. Christmas, Thanksgiving, a relative in town, or “just because”, there was always a simple salad of mixed red and green lettuce, minced shallot, and vinaigrette served after dinner.

Hawaiian Chicken Foil Packets

While working towards their “Cast Iron Chef” activity pin, Daylen’s Webelos den chose this recipe to cook one evening. The den gathered at our house, and together we assembled the Hawaiian Chicken Foil Packets, cooked a Dutch Oven Peach Cobbler, and baked drop biscuits in “box ovens” which scouts had previously built during den meetings!

Cherry Tomato and Corn Salad

This recipe is from the “first” cookbook that we purchased and is likely one of our “oldest” recipes. It was a staple at any picnic or cookout that we would attend for many years, and is still a favorite to make once corn is in season.
